How to prepare the custard: 8 recipes for all tastes

Prepare a classic, add in condensed milk cream, cocoa and cream, or remove the eggs, milk and butter.

1. Classic custard
Ingredients
- 150-200 g of sugar;
- 50 g flour;
- 1 teaspoon vanilla sugar and a pinch of vanilla;
- 2 eggs;
- 500 ml of milk;
- 100 grams of butter.
preparation
Put in a saucepan the sugar, flour, vanilla and eggs and bring whisk until smooth. Gradually add the milk, whisking the mixture thoroughly.
Put the pan on low heat and cook, stirring constantly with a whisk. When the cream thickens and begins to boil, remove it from the heat.
Add the softened butter into the hot mass and mix whisk until smooth. Leave the cream at room temperature until cool.

2. Classic protein custard
Ingredients
- 170 g of sugar;
- 80 ml of water;
- 2 egg whites;
- a pinch of salt;
- 1 teaspoon vanilla sugar and a pinch of vanilla;
- ¼ teaspoon citric acid.

3. Custard without eggs
Ingredients
- 500 ml of milk;
- 150-200 g of sugar;
- 4 tablespoons flour;
- 130 g butter;
- 1 teaspoon vanilla sugar and a pinch of vanilla.

In a saucepan, combine half of the milk, sugar and flour. The remaining milk to a boil and pour into the prepared mixture, the whipping whisk.

4. Custard without oil
Ingredients

5. Custard cream sour
Ingredients
- 300 g of cream, 20% fat;

Put in a saucepan the cream, eggs, sugar and starch and mix until smooth. Put on a steam bath, and, stirring constantly mass rim, let it thicken.
Leave to cool the mass at room temperature. In a deep tank with a mixer, beat the softened butter. Gradually add to it a mixture of sour cream and mix thoroughly whisk mixer. Stir in vanilla and mix again.

6. Custard with condensed milk without eggs
Ingredients
- 250 ml of milk;
- 1½-2 tablespoons sugar;
- 2 tablespoons flour;
- 200 g condensed milk;
- 50 g of butter.
preparation
In a pan pour half the milk, add the sugar and whisk the flour and mix until smooth. Enter the remaining milk, put on a moderate heat and cook, stirring, until thick.
Cool the cream at room temperature. Pour into it half condensed milk and whisk thoroughly. Add the condensed milk and the remnants of the softened butter and mix well again.
7. Custard lemon cream without milk
Ingredients
- 4 medium lemons;
- 200 g of sugar;
- 4 eggs;
- 50 g of butter.
preparation
Grate the zest of two lemons on a fine grater and mix with sugar. Squeeze out all the juice of four lemons and strain. To make it more possible to send fruit in the microwave for 15-20 seconds.
Connect the juice with sugar. whisk whisk the eggs in a separate container. Pour them into the lemon mass, mix well and leave for 15 minutes.

8. Chocolate custard
Ingredients
- 500 ml of milk;
- 180 g of sugar;
- 2 eggs;
- a pinch of salt;
- 2 tablespoons cornstarch;
- 4 tablespoons quality cocoa;
- 50 g of butter.
preparation
In a saucepan pour the milk ⅔, sprinkle in sugar and, stirring, heat over moderate heat. In the remaining milk, add eggs, salt, starch and cocoa and whisk whisk thoroughly.
Without stopping to whisk the egg mixture, pour it into hot milk. Place the pot with cream on a moderate heat and cook, stirring constantly to avoid lumps.
Once the mass begins to boil, remove it from heat and cool at room temperature.
