How to cook an original dinner for the girls: gnocchi with mushroom sauce

If you want to make a dish, looking at that girl immediately think that you spent on it a lot more effort than actually gnocchi - an ideal option. Classic Italian dumplings made from potatoes literally in a jiffy, but still they can be molded in advance and boil just before the coming of the one because I want to impress.
Ingredients
For the gnocchi:
- 500 g of potato;
- 180 g flour;
- a pinch of salt.
For the sauce:
- 1L tomatoes in brine;
- 200 g mushrooms;
- 1 medium onion;
- 2 tablespoons of vegetable oil;
- 140 g hard cheese;
- 90 g of spinach;
- arugula - for decoration.
Potatoes need to boil directly in the skin such that they do not absorb too much water. Then it is very important to clean the potatoes still hot (in aid of gloves) and quickly mash or finely grate. Pyurirovat hot potatoes necessary because so it will absorb less flour gnocchi and remain soft after cooking. Another important point: the tubers do not need to bring to full readiness, and even more so to tenderize, better let them stay a little dampish inside, otherwise the dough will disintegrate.
To the grated potatoes, add a pinch of salt, half of the flour and mix. Pour the remaining flour and knead the potato dough with your hands until it does not gather together. Divide dough into 4 pieces and each roll into a bundle 2-2.5 cm thick. Cut the tow to pieces, give them the desired shape, and then boil until the ascent in plenty of boiling salted water.
For the sauce, sauté onion half-rings in hot oil and add the mushrooms. Seasonings, leave the mushrooms to brown the moisture to evaporate and pour in the tomatoes with juice. Mash spoon tomato sauce and boiled for 10-15 minutes. At the end, add the spinach leaves.
Mix the freshly gnocchi with the sauce and sprinkle with grated cheese ⅔ of all. Leave the dish under the cap prior to the filing, the cheese had melted.
Laying gnocchi on a plate, sprinkle with them the remains of the cheese, add freshly ground pepper and optionally - arugula greens.
