Breakfast ideas: "cloud" eggs

"Cloud" scrambled eggs - it whipped in a cool foam protein, which in the last minutes of cooking spread yolk and toppings to taste. A great alternative to the banal fried egg for breakfast.
Ingredients:
- 3 large chicken eggs;
- 3 strips of bacon;
- 3 teaspoons grated hard cheese;
- green onions to taste;
- salt and pepper to taste.
The most important step in the preparation of such eggs - the yolks separated from proteins without damaging them. The easiest way to do it hands, letting excess drip off the protein between the fingers, or if ready to fight a lot of eggs, use life hacking with a plastic bottle.
To the yolks are not dried out, and do not stick to the pan during cooking protein, grease oil selected dishes.
Separately, fry the bacon to a crisp and finely chop.
Chilled proteins season pinch of salt and pepper and then whip until stable peaks at maximum mixer speed. Together with a standard pair of spices, proteins can also add any dried herbs and other spices to taste, chopped fresh herbs or pesto.
Cover baking sheet for baking parchment and grease a small amount of vegetable oil. Arrange three roughly equal portions of the protein foam and make an indentation in each using a spoon.
Bake at 230 degrees proteins for 5 minutes, then put in the center of a little grated cheese, raw egg yolk and return everything in the oven for another 5 minutes.
Toppings like bacon and herbs, add to taste. Serve a best eggs on crispy toast of white bread with butter.
