5 Delicious salad with chicken

A simple salad with avocado, healthy with vegetables and cheese, broccoli with a sharp, rich with mushrooms and spicy with pineapple - prepare these dishes with chicken under the force of each. Besides, they diversify exactly normal lunch or even decorate a festive table.
A simple salad with chicken and avocado
Ingredients
- 2 cooked chicken fillet;
- 1 large avocado;
- ¼ onion;
- juice of ½ lime;
- 2 tablespoons minced cilantro or basil;
- salt and freshly ground black pepper - to taste.
preparation
Chicken cut into strips, avocado and onion - small cubes. Put them in a bowl, add the remaining ingredients and mix well.
If you have a food processor or blender, you can grind in it all the ingredients except the chicken. Then the salad will have a creamy, delicate texture.
Healthy salad with chicken, vegetables and feta cheese
Ingredients
- 1 lemon;
- 800-900 g of tomatoes;
- 2 boiled or fried chicken fillet;
- 1 large cucumber;
- ½ cup chopped parsley leaves;
- ¼ cup chopped green onions;
- ¼ cup fresh basil leaves;
- 2 tablespoons olive oil;
- 1 teaspoon salt;
- ½ teaspoon freshly ground black pepper;
- ½ cup finely chopped feta cheese.
preparation
Grate lemon peel (enough 2 teaspoons). squeeze the juice from the lemon itself (need 2 tablespoons). Tomatoes, cucumber fillet and coarsely chop. Put them in a large bowl, add to the zest, lemon juice, the remaining ingredients, except the cheese and mix.
Let the salad stand 10 minutes, then mix it again and serve decorated with feta cheese.
Spicy salad with chicken and broccoli
Ingredients
- 2 heads of broccoli florets in disassembled;
- 2 tablespoons olive oil;
- 5 shallot bulbs;
- 2 red chillies;
- 2 garlic cloves;
- 4 fried chicken fillet;
- a handful of pitted black olives;
- 4 tablespoons of soy sauce.
preparation
Boil broccoli in boiling water or steam for 4-5 minutes (until soft). Fresh frozen broccoli will need to cook for 10 minutes longer. Fold the cabbage in a colander, to shift into a bowl and set aside.
In a skillet, heat the oil. Cook for about 2 minutes on it finely chopped shallots, then add a seeded and chopped chili pepper and chopped garlic. Fry them another 4 minutes until soft.
Remove the onion, pepper and garlic in oil, add them to the broccoli. Also, put in a bowl of sliced chicken, black olives and mix.
Pour the soy sauce in a saucepan with butter, which are fried onion, pepper and garlic. Warm the mixture on medium heat and pour it salad. The finished dish can be served in warm or cold.
Hearty salad with chicken and mushrooms
Ingredients
- 500 g of chicken;
- 300-350 g mushrooms;
- 1 large carrot;
- 1 small onion;
- 5-6 pickled cucumbers;
- 2 tablespoons mayonnaise;
- salt and black pepper - to taste;
- olive oil.

Rub chicken with salt and pepper and fry it on both sides in olive oil until done. Transfer the meat to a cutting board, let it cool at least 10 minutes, then cut into cubes of medium size, and pour into a bowl.
Separately fry diced mushrooms until golden brown (when water is evaporated, their salt). Ready mushrooms send in a bowl for the chicken. Following fry grated carrots and chopped onions until tender and add them to the salad. Cucumbers also cut into small cubes and add to the other ingredients.
Wait until the salad to cool to room temperature, and fill it with mayonnaise. If desired, add more salt and pepper.
Spicy salad with chicken and pineapple
Ingredients
For the salad:
- 1 cup diced fresh or canned pineapple;
- 450 g of boiled or roast is chicken;
- ½ cup cashews;
- 2 green onions pen;
- salt - to taste.
For the filling:
- ½ cup Greek yogurt;
- 1 teaspoon mustard;
- ½ teaspoon of dried minced garlic;
- ground hot pepper - to taste.
preparation
Mix with chopped pineapple cubes of filet medium, divided into halves with nuts and chopped onions (salad needed only white and light green parts of the pen). Separately prepare the filling: in a bowl whisk yogurt, mustard, garlic powder and hot peppers.
Season the salad with salt and chill it in the refrigerator. Serve as a separate dish or as an appetizer with crackers.
