Recipes: Burgers without bread

The idea to prepare different versions came after we tried a burger without bread in one of the bars. Played the role of bread lettuce leaves. But they can be replaced by something else, a hearty and tasty, but less nutritious. We chose the zucchini (green and yellow), common cabbage (was very tasty) and eggplant!

Since the burger should be a low-calorie meat you need to choose the appropriate. We have at hand was a turkey (sirloin), but you can use veal, chicken or beef.

We decided to test three options. As mentioned above, the choice fell on two kinds of zucchini, eggplant and cabbage.
Eggplant. Choose thicker eggplant, cut it into slices, add salt and a bit of a slugger. Leave to stand for 15-20 minutes to left bitterness. Preheat the frying pan Grill, lubricate it with vegetable oil and send it to the eggplant slices. If there is no pan-grill, you can bake in the oven.
Cabbage. Cabbage is better to choose a younger, and the leaves should be thinner, but if such an option is not present, it is suitable and most common. Rigid cabbage leaves slugger hammer for chops, cut them into thin strips, add salt, pepper and leave to stand for 15-20 minutes. Then merge the separated cabbage juice and add egg (an egg approximately 150 g of cabbage). Mixed well and thicker consistency add a bit of whole wheat flour or breadcrumbs. A specified number of cabbage will leave about 2-3 tablespoons of flour.
Preheat the frying pan, add to vegetable oil for frying cabbage and spread in the form of small pancakes, the diameter of which depends on how big you made meat patties.
Zucchini. As it turned out, the yellow and green zucchini different taste (I personally like the taste of green), so we We decided to try to combine them: the role of the upper part of the rolls has been given the green zucchini, and the role of the bottom - the yellow. Cooking is about the same as in the embodiment of cabbage, with the only difference being that they do not need to beat, and it is necessary to rub on a coarse grater.
Rubbed, put in a plate and allows to stand for 20 minutes so that you can get rid of excess juice. Then add egg, salt, freshly ground black pepper and flour or breadcrumbs (per average size zucchini leaves one egg). Well all this is stirred and spread a tablespoon of small pancakes.
As I said, the amount of flour or bread crumbs will depend on the quantity and richness of vegetables. The juice will still be released in the cooking process, so you can carefully pour too much, pressing grated vegetables lid or plate.
You can also make a zucchini the same thing as with eggplant: cut into circles and send it to the grill. Also, instead of the zucchini can be used most ordinary zucchini or squash.
Sauce
Option for eggplant. Burger with eggplant goes with us along with the circle juicy and sweet tomato, so we decided to choose a very standard and delicious for him sauce option: simply took Greek yogurt (or yogurt without any flavors), put in there a little bit of garlic and freshly ground black pepper!
Option for cabbage and zucchini. For these burgers we chose cucumber, iceberg lettuce and mint-yogurt sauce. To prepare the sauce, you will need a Greek yogurt or yogurt without any flavorings (3-4 tablespoons) fresh mint (3-4 leaf) and 1 teaspoon lemon juice.
Burger with eggplant: Two slices of eggplant, grilled meat patty, slice of tomato sauce and yogurt, garlic and freshly ground black pepper.
Burger with cabbage: Two cabbage pancake, meat patty, cucumber (more dots), iceberg lettuce and a sauce made from yogurt, fresh mint leaves and lemon juice.
Burger with zucchini: Two pancakes with zucchini, cucumber (more dots), iceberg lettuce and a sauce made from yogurt, fresh mint leaves and lemon juice.
If vegetable pancakes you had more than meat, do not worry, they go perfectly with the same yogurt or yogurt with garlic and mint, even if you stand up a day or two!
