As a child I could not stand the pumpkin porridge, and, as a consequence, very Pumpkin. If eaten, it is exclusively in the form of cheese. Now my attitude changed to the pumpkin in a diametrically opposite direction, because I found a lot of dishes - sweet, salty, sharp, spicy, - which can be prepared from it! As I said, the pumpkin can be different, and this selection of recipes we will try to show its beauty on all sides! So, today we have a menu of spicy pumpkin soup, spicy pumpkin ragout, pumpkin cake, pumpkin porridge and pancakes from a pumpkin.
Spicy pumpkin soup with cream
Ingredients:
- 1 small pumpkin;
- 400 ml of coconut milk or cream fat content of 10-15%;
- 240 ml of boiling water;
- 1 sprig rosemary;
- ginger root piece measuring 2 cm, peeled and crushed;
- 2 tablespoons apple cider;
- salt and black pepper to taste.
preparation
Preheat oven to 200 degrees, forward pumpkin halves, removes seredinku with seeds and baked until done (approximately 35 minutes). Pumpkin ready when its flesh becomes completely soft and the rind acquires a golden color.
Ready-made pumpkin peeled and send in a blender along with all the other ingredients. Beat until smooth. If the soup is too thick, you can add a little boiling water. Ready soup poured into the pan, add salt and pepper to taste and a little heated, if necessary.
Acute pumpkin ragout
Ingredients:
- 1 pumpkin;
- 2 tablespoons olive oil;
- 1 onion;
- 1 crushed garlic clove;
- a few sprigs of thyme;
- 1 chilli;
- tomato paste (optional);
- salt and black pepper to taste.

Cut the pumpkin, peel and seeds from the rind, cut into small squares. Also slice the onion into thin half-rings.
Preheat the deep pan, pour olive oil, add the onion and garlic. Passeruete them a few minutes on low heat. Once the onion has started to become transparent, add the chopped pumpkin and everything well mixed. Ready to heat for 3 minutes and then add sliced rings hot chili peppers. Continue to stir the fire a few more minutes, or until squash begins to gold. After that, pour boiling water so that water covered the pumpkin for about two-thirds, add the thyme, cover with a lid and cook until tender.
Also in this simple stew can add 2-3 tablespoons of tomato paste. If you do not have on hand fresh chili pepper, you can add ⅛ teaspoon ground chili pepper or hot pepper flakes.
Pancakes from a pumpkin
Ingredients:
- 156 g flour;
- 2 tablespoons sugar;
- 2 teaspoons baking powder;
- ½ teaspoon of cinnamon;
- ½ teaspoon ground ginger;
- ½ teaspoon salt;
- ⅛ teaspoon ground cloves;
- ⅛ teaspoon ground nutmeg;
- 237 ml of milk;
- 6 tablespoons pumpkin puree;
- 2 tablespoons butter;
- 1 egg.
preparation
In a separate bowl mix together the flour, sugar, salt, spices and baking powder.
In another bowl mix the liquid ingredients: pumpkin puree (pumpkin previously boiled and milled blender), egg, milk and melted butter.
Agitation them until a homogeneous mass and add to bowl with the dry ingredients mixed until a homogeneous mass with a halo, and baked in a pan, lubricating surface butter.
To the table served with butter and honey.
Pumpkin Cake
Ingredients
For the dough:
- 420 g of pumpkin puree;
- 2 eggs;
- 2 cups of flour;
- 1 cup of sugar;
- ½ cup vegetable oil;
- ¼ teaspoon ground ginger;
- ⅛ teaspoon ground cloves;
- 1 teaspoon cinnamon;
- 1 teaspoon vanilla sugar;
- ½ teaspoon salt;
- 1 teaspoon baking powder;
- ½ teaspoon of baking soda.
For the glaze:
- 120 g of cream cheese;
- Softened 3 tablespoons butter;
- 1 teaspoon of milk;
- 1 teaspoon vanilla sugar and a pinch of vanilla;
- 1 cup powdered sugar.
preparation
Preheat the oven to 160 degrees. In a large bowl, mix all the dry ingredients and make a small indentation in the middle. In a separate bowl mix using a mixer liquid ingredients: pumpkin puree, vegetable oil.
Add all this to the dry mix and knead the dough with a mixer, or halo. Pour it onto the prepared pan, the laid baking paper or a rectangular shape for baking.
Bake until tender and pulls out of the mold to cool the cake. While it cools, prepare the glaze. To this mix using a mixer cream cheese with oil, then add sugar and vanilla. If the frosting is too thick, it can be diluted with a little milk.
The finished glaze is evenly distributed over the surface of the cake and cut it into pieces the size you want.
Pumpkin porridge with apples and corn groats
Ingredients:
- ½ cup of corn grits;
- 300 g of gourd;
- 1 small apple;
- 1 tablespoon sugar;
- honey and butter to taste.
preparation
Mixing water glass with ¾ ¾ cup milk, bring to the boil, was dissolved in a mixture of sugar and add to corn grits. Cook until tender over low heat for 15-20 minutes.
Until cooked cereals, slice the pumpkin into small pieces, take away the peel. Clean the apple from the core and peel and cut into same-largest pieces, like a pumpkin. At the bottom of a small saucepan pour quite a bit of boiling water, spread with apple to pumpkin and simmer, covered until tender. Connecting pumpkin and applesauce and finished corn grits, stir well, add honey and butter to taste and allows to stand for another 10 minutes.
