4 very Italian pasta recipes for runners

The last time I was in Italy 13 years ago and remember how I was surprised by their kitchen. Pasta with zucchini and smoked salmon

Pasta with eggplant and fish
Ingredients: 2 medium eggplants, 2 small fish fillets (or one large), 2-3 medium tomatoes, pasta of your choice, salt and pepper to taste, 2-3 tbsp. olive oil, fresh basil and parmesan for decoration.
Preparation. Fish fillets thawed and cut into small pieces, eggplant and tomato dices, put water to a paste.
On the frying pan fry the eggplant, and when they are almost ready, add the diced tomatoes there. As for the fish, it can be on a separate frying pan, in order to speed up the cooking process. Keep in mind that eggplant instantly absorb all the oil, but if you have a good pan, they will burn the excess fat and add is not necessary.
The vegetables are ready add the fish ready, add salt and pepper, and everything is well mixed. Then add a couple tablespoons of water that remained from cooking pasta, and the pasta itself. Before serving, add beauty and taste a few leaves of fresh basil and parmesan.

Pasta with cream cheese, eggplant, peppers and pine nuts
Ingredients: pasta of your choice, 1 large bell pepper, 1 eggplant (pictured two, but I'm telling you - take one!), bunch of fresh basil, 2-3 medium tomato or tomato paste, 100 g of pine nuts, 100 grams of cheese, salt and pepper taste.
Preparation. Cut into small pieces of eggplant and peppers. Preheat the frying pan, spread eggplant in it. In parallel, as always, ready to fall. After 10 minutes, add to the eggplant pepper and fry the vegetables until tender. Just a minute before removing the pan from the heat, add chopped tomatoes or tomato paste.
To shift the cooled vegetable mixture in blender, add to the basil, pine nuts and cheese and ground. Consistency can be a cream, and a meal, that is, when you get the big pieces. The finished mixture is added to the paste and stir well. Before serving, sprinkle with grated Parmesan cheese.
The idea is you should have a cream of orange, but it all depends on the brightness of pepper and tomato. I turned light pink, as I used too much eggplant, who "ate" a large part of the world. If you add more bright red peppers, a mixture will be more bright color.
Pasta with Sicilian pesto
Ingredients: paste choices, 500 g of tomatoes, 100 grams of cheese, pine nuts 100 g, 150 ml of olive oil 2 garlic cloves, basil beam, 100 g parmesan cheese, salt and pepper to taste.
Preparation. This pesto is prepared the same as the standard green option. Before adding the tomatoes in a blender, remove the skins from them, cut them and remove the seeds. In order to remove a skin, incise them very little over the top in a cross, put in a deep bowl or pot and pour the boiling water just for a moment. Then pour the hot water pour over tomatoes and very cold water (can be preset pan of water in the refrigerator or freezer). The colder the water, the easier it will be to remove the rind.
Peeled tomatoes puts in a blender, add to the olive oil, nuts, cheese, garlic, basil, cheese and a little salt and pepper. To grind everything until smooth and try to taste. Add, if you feel that something is missing (any ingredient). Ready-made pesto mixed with boiled pasta.
